Ambrosia Millet Pudding

Ingredients

  • 3 1/2 cups HOT cooked millet
  • 2 - 3 cups granola
  • 1 cup crushed pineapple
  • 1 cup soy or rice milk
  • 3 bananas
  • 1/4 cup pure maple syrup
  • 1/2 tsp. vanilla
  • 2 - 3 Tbs. cornstarch
  • 1/2 tsp. sea salt

Directions

Whiz all ingredients except granola and bananas in a blender until smooth. Pour into saucepan and thicken on medium/high heat, stirring constantly with a whisk. Sprinkle granola in bottom of casserole dish. Slice bananas and layer them on top of granola. Next, pour pudding mixture on top. Chill until thick. Serve. This is also good for breakfast!
