Ingredients
- 1 baked pie shell
- 1 package Mori-Nu Mates Vanilla Low-Fat Pudding Mix
- 1 small can pineapple, crushed and undrained
- 1 pint (2 cups) tofu sour cream
- 1 cup unsweetened coconut
Cooking items needed

Directions
- Place above ingredients in a large bowl and mix at a low speed until mixed (approx. 1 minute or less).
- Pour into a purchased or homemade pie shell and chill. Garnish with a non-dairy topping if desired.
